Duck/Chicken Moile

Prep:
1 duck/chicken washed and cut up in fairly large pieces.  Sprinkle with salt and keep aside.

Cut these items-
1/2 kg onion cut into rings
1/2 inch ginger juliennes
5-6 garlic flake juliennes
6 green chillies slit with seeds removed.

You will need these-
3 tblsp oil
2 tblsp sugar
4 tblsp vinegar
2 tblsp bottle masala
2 tsp garam masala

Garnish:
2 potatoes, sliced, salted and shallow fried.

Start:
Fry the duck/chicken pieces in vessel with oil till lightly browned on all sides.  Add 2 tblsp sugar and let it caramalise.
Remove the meat and keep aside.

Add the onion rings to the same vessel and fry covered on very slow heat until quite soft and pale coloured.  Keep stirring occassionally to avoid sticking to the bottom.  The onions should become nice and mushy. 

Then add the rest of the cut ingredient and fry a few seconds.  Then add 2 tblsp bottle masala and fry gently, throwing in a little water till nicely fried and smells good.

Add about 1/4 pint of water and allow to boil.

Then add the duck/chicken pieces, cover and cook on very slow heat.

When meat is cooked, add vinegar and let it simmer till oil floats on top.

Finally, add the garam masala powder and stir.
Garnish with sliced fried potatoes

!  Sliced fried potatoes is a signature garnish.
You can use duck or chicken or beef of Tongue in this recipe.
