Chicken Khudi (Cuddi de Gallinha)

Cut chicken into pieces and wash well.
Sprinkle salt over the chicken and leave for a while.

Roast these items on dry pan -
4 sliced onions
4 roughly chopped green chillies
1/4 coconut grated

Grind to paste using a little water -
1 tblsp of ginger-garlic paste
Roasted ingredients above

Heat 2 tblsp oil and saute the ground paste.
Add 1 tblsp bottle masala.
Add chicken (or any game meat) and fry a little.
Add chopped potatoes and enough water for gravy and boil.
Add lime/lemon juice or tamarind extract and simmer.


! A shortcut - especially if you dont have freshly grated coconut - omit the coconut in the receipe above, but add half a can of store bought coconut milk at the very end and simmer. This will make the dish more creamy.
